Sardine Niçoise

We’ve switched to sardines instead of tuna in this classic salad. Whack them on the barbie or under the grill for a gorgeous, good-for-you treat.

Easy • Ready in 20 mins • Serves 4

500g new Jersey potatoes, quartered
4 eggs
200g green beans, trimmed
16 sardines with garlic chilli and lemon
3tbsp low-fat French dressing
2tbsp mustard ketchup (such as Tracklements)
2 Little Gem lettuces, leaves separated
14 Nocellara olives
12 sunblush tomato pieces

1 Cook the potatoes in a pan of boiling salted water for 15 mins until tender.
