Keema samosas

If there’s one food I associate with Ramadan, it has to be keema samosas. These spicy meat-filled pastries are a freezer essential – prepare dozens in advance and freeze, then defrost and fry to golden perfection for Iftar.

For the dough

500g plain flour, plus 1 tbsp
1 tsp ajwain (carom seeds)
1 tbsp vegetable oil, plus extra for deep-frying

For the meat filling

1 tbsp vegetable oil1 red onion, sliced750g mince (mutton or beef)140g potatoes, peeled and diced1 tsp chilli powder1 tsp garam masala½ tsp cumin seeds150g frozen peaschutney, to serve
