SWEET & SMOKY SPICED CHICKEN & LEEK TRAY BAKE

Serves 2-3 Takes 55 minutes

INGREDIENTS

• 350g/12oz new potatoes, halved
• 2 tbsp Middle Eastern spice mix
• 4 tbsp olive oil
• 4 boneless chicken thighs
• 1 large leek, sliced into 2cm/¾in rounds, rinsed and drained
• 1 red pepper, deseeded and sliced
• 1 tbsp sweet smoked paprika
• 2 tsp ras el hanout
• 1 tbsp honey
• 25g/1oz whole blanched almonds
• A small bunch of fresh flat-leaf parsley, roughly chopped

Preheat the oven to 220°C, fan 200°C, gas 7. Add the halved new potatoes to a large roasting tin with 1 tbsp of Middle Eastern spice
