YOU WILL NEED
8 medium eggs
1tsp dried Italian herbs, or dried oregano, plus extra to sprinkle
30g finely grated Parmesan cheese or mature Cheddar cheese
1tbsp olive oil
4tbsp tomato passata or pizza sauce
90g sliced pepperoni
Handful pitted olives, chopped
125g ball mozzarella, roughly torn
Handful basil and/or oregano leaves, to garnish (optional)
Leafy salad and crusty bread, to serve (optional)

HOW TO DO IT
1 Heat the grill to high. In a large bowl, beat the eggs, dried herbs, parmesan and a pinch of salt and pepper. Heat the oil in the frying pan over low-medium heat and add the egg mixture.
