First, make your pancakes

■ Whisk together and and set aside. Put in a bowl with a pinch of salt. Make a well in the, using a piece of kitchen paper to soak up any excess. When the pan is hot, tilt it slightly, then pour a little batter into the top edge and let it flow down to cover the base of the pan. Cook for 2 mins, until the underside is pale golden. Flip the pancake or turn with a spatula to cook the other side. Keep the pancakes warm while you repeat with the remaining batter. Makes 12.
