STIR-FRY CHICKEN WITH BASIL & FRIED EGG

SERVES 4 PREP 15 MINS COOK 20 MINS

1/3 cup sweet chilli sauce
1½ tbsp fish sauce, plus ¼ cup extra
1½ tbsp lime juice, plus wedges to serve
¼ cup vegetable oil
4 eggs
4 garlic cloves, crushed
1 long red chilli, thinly sliced (optional)
500g chicken mince
150g green beans, trimmed, halved
2 tbsp brown sugar
1 cup Thai basil leaves
1 butter lettuce, leaves separated, washed, dried

1 In a small bowl, combine chilli and fish sauces and lime juice. Set aside.

In a wok, heat 2 tsp oil on high.
