STIR-FRY CHICKEN WITH BASIL & FRIED EGG

• 1/3 cup sweet chilli sauce
• 1½ tbsp fish sauce, plus ¼ cup extra
• 1½ tbsp lime juice, plus wedges to serve
• ¼ cup vegetable oil
• 4 eggs
• 4 garlic cloves, crushed
• 1 long red chilli, thinly sliced (optional)
• 500g chicken mince
• 150g green beans, trimmed, halved
• 2 tbsp brown sugar
• 1 cup Thai basil leaves
• 1 butter lettuce, leaves separated, washed, dried
