SPAGHETTI FROM CAPRI (spaghetti alla caprese)

Serves 4-6 Takes 30 minutes

INGREDIENTS

• 250g/9oz vine cherry tomatoes, ripe and flavourful (or Datterini tomatoes, if available), cut into quarters• 1 clove garlic, peeled and sliced• 3 tbsp olive oil• Sea salt and freshly ground black pepper• 500g/1lb 2oz spaghetti• 125g/4½oz buffalo mozzarella, torn into bite-sized pieces• A generous handful of fresh basil, torn• 2 tsp chopped fresh oregano• Freshly grated Parmesan, to serve
