Quinoa Burgers
SERVES 6
INGREDIENTS
1 cup (200g) uncooked quinoa
400g tinned adzuki beans, rinsed and rained
220g medium-firm tofu
⅓ cup (20g) nutritional yeast
1 tblsp tomato paste (concentrated purée)
½ tsp best-quality salt, plus extra to cook
Lots of pepper
Grapeseed oil, for frying
Bun, mayo, pineapple, beetroot, tomato, relish, cheese, lettuce, to serve
METHOD
1 Cook quinoa according to packet directions, then transfer to a large bowl and add all other ingredients
