You need
- 2kg oxtail, excess fat removed
- salt and freshly ground black pepper
- oil, for shallow frying
- 12 small pickling onions, peeled and halved
- 3 cloves of garlic, roughly chopped
- 500ml red wine
- 1 cinnamon stick
- 3 whole cloves
- 3 allspice berries, bruised
- 1 tin (410g) chopped
