Antipasto bruschetta
SERVES 6–8
PREP + COOKING TIME: 50 MINUTES
• 750g button mushrooms, halved
• 62.5ml(¼ cup) olive oil
• grated zest and juice of 1lemon
• 3 garlic cloves, chopped finely
• 6 sprigs of thyme
• 3 sweet peppers, 1 yellow, 1 red, 1 green
• handful of parsley, chopped roughly
• 20ml(4 tsp) red wine vinegar
• ciabatta loaf, cut into 1cm-thick slices,
