GLAZED HAM & EASY SLAW

SERVES 16 PREP 15 MINS COOK 40 MINS

½ leg ham, shank end, skin on
¾ cup orange marmalade (or apricot jam)
¼ cup whisky
juice 1 orange
2 tbsp seeded mustard
2 tbsp CSR Rapadura Sugar (or brown sugar)
1 cinnamon stick

COLESLAW

¼ cup mayonnaise
½ cup light sour cream
1 tbsp lemon juice
¼ red cabbage, finely shredded
½ Chinese cabbage, finely shredded
1 small carrot, matchsticks
1 seeded red capsicum, thinly sliced
4 green onions, thinly sliced
1/3 cup flaked almonds, toasted
½ cup mint leaves

1 Preheat oven to 180˚C.

2 Remove rind from ham, leaving shank covered. Score fat at 2cm intervals to form a diamond pattern. Place ham in a large, deep roasting dish.
