GLAZED HAM & EASY SLAW
SERVES 16 PREP 15 MINS COOK 40 MINS
• ½ leg ham, shank end, skin on
• ¾ cup orange marmalade (or apricot jam)
• ¼ cup whisky
• juice 1 orange
• 2 tbsp seeded mustard
• 2 tbsp CSR Rapadura Sugar (or brown sugar)
• 1 cinnamon stick
COLESLAW
• ¼ cup mayonnaise
• ½ cup light sour cream
• 1 tbsp lemon juice
• ¼ red cabbage, finely shredded
• ½ Chinese cabbage, finely shredded
• 1 small carrot, matchsticks
• 1 seeded red capsicum, thinly sliced
• 4 green onions, thinly sliced
•1/3 cup flaked almonds, toasted
• ½ cup mint leaves
1 Preheat oven to 180˚C.
2 Remove rind from ham, leaving shank covered. Score fat at 2cm intervals to form a diamond pattern. Place ham in a large, deep roasting dish.
