HONEY, GINGER & MUSTARD GLAZED HAM

SERVES 16 PREP 20 MINS COOK 1 HOUR

1/3 cup honey
½ cup brown sugar
1 tbsp grated ginger
1 tbsp Dijon mustard
2 cloves garlic, crushed
4kg half leg ham, on the bone
whole cloves, to stud

1 In a medium saucepan, stir honey, sugar, ginger, mustard and garlic on low heat until sugar dissolves.

2 Preheat oven to 160°C. Line a large oven pan with 2 sheets of baking paper.

3 Use a small sharp knife to cut around shank of ham, about 10cm from end. Run thumb under rind around edge of ham. Gently peel rind away in one piece, easing it away from the fat layer underneath.

4 Score fat in a diamond pattern down to 5mm deep, taking care not to cut into meat. Press a clove into centre of each diamond. Transfer to pan.

Brush one-third of the glaze all over ham. Bake 45-50 mins, basting with remaining glaze every 15 mins.
