Frugal Fritters

CAULIFLOWER, BACON & CHEESE FRITTERS

MAKES 12 PREP 10 MINS COOK 15 MINS

2 cups small cauliflower florets

2 tbsp water

100g diced bacon

1 cup self-raising flour

⅓ cup milk

2 eggs

100g tasty cheese, coarsely grated

2 tbsp chopped chives

vegetable oil, to deep-fry

lemon wedges, to serve

1 Place cauliflower and water in a microwave-safe bowl. Microwave, covered, on high for 3 mins or until tender. Stand for 1 min.
