CHOCOLATE ST EMILION
This chocolate mousse is a dish for grown-ups. It has a rich yet clean taste and it’s not too sweet.
SERVES 6 PREP 20 MINS, PLUS SETTING
✣ 6 almond macaroons
✣ 2tbsp dark rum, brandy, Grand Marnier or Amaretto liqueur For the chocolate mousse:
✣ 110ml double cream
✣ 110g chocolate, broken into small pieces
✣ 2 eggs, separated To serve:
✣ Thick pouring cream
✣ Nougatine shards, optional You will need:
✣ 6 pretty glasses or pots
1 Place 1 almond macaroon in the bottom of each glass
