1tbsp vegetable oil350g minced pork1tbsp minced garlic1tbsp minced ginger2tbsp doubanjiang (fermented chilli bean paste)2tbsp honey1tbsp white rice vinegar1tbsp light soy sauce2tsp dark soy sauce2tsp chicken powder or bouillon powder3 spring onions, roughly chopped into 5cm lengths150g bok choy, cut into bite-sized pieces300g straight-to-wok udon noodles1tbsp Chinese chilli oil
