Ching’s braised hong sao pork
Sweet and salty spiced pork belly in a deliciously sticky sauce.
SERVES 4
✱ 700g pork belly slices, rindless
✱ 2tbsp rapeseed or groundnut oil
✱ 1tbsp fresh ginger, grated and peeled
✱ 3tbsp Shaohsing rice wine or dry sherry
✱ 3 star anise
✱ 1tsp whole Sichuan peppercorns
✱ 3 long, whole, dried red chillies
✱ 250ml chicken stock
✱ 80ml dark soy sauce
✱ 3tbsp soft brown✱
