Ching’s braised hong sao pork

Sweet and salty spiced pork belly in a deliciously sticky sauce.

SERVES 4

700g pork belly slices, rindless
2tbsp rapeseed or groundnut oil
1tbsp fresh ginger, grated and peeled
3tbsp Shaohsing rice wine or dry sherry
3 star anise
1tsp whole Sichuan peppercorns
3 long, whole, dried red chillies
250ml chicken stock
80ml dark soy sauce
3tbsp soft brown
