Chilli beef udon
Quick, easy and full of flavour – you can serve this at lunch or dinner.
SERVES 2 PREP 10 MINS COOK 10 MINS
✱ 1 x 250–300g sirloin steak, cut into 5mm slices
✱ 2tbsp oil
✱ 1 medium-size pak choi, leaves separated
✱ ½ red onion, thinly sliced
✱ ½ leek, chopped in half lengthways and finely sliced at an angle
✱ 4 asparagus stems, each chopped into 3
✱ 100g beansprouts
✱ 1 free-range egg, beaten
✱ 250g cooked udon noodles
✱ 30ml spicy teriyaki sauce
✱ Few sprigs of coriander, leaves chopped
✱ 1 red chilli, sliced
✱ Salt and cracked black pepper
Season the steak with salt and pepper. Place a medium-size frying pan over a high heat, add the oil and, when hot, stir-fry the steak to sear the edges. Add all of the vegetables
