Croque madame rolls

PREP + COOK TIME 40 MINUTES MAKES 8

2 tablespoons plain flour
1 cup (250ml) hot milk
¼ cup (30g) grated Gruyère cheese
2 teaspoons Dijon mustard
1 tablespoon coarsely chopped
flat-leaf parsley cooking oil spray
240g sliced brioche loaf
8 slices prosciutto (120g), halved
4 bocconcini (240g), halved
cornichons, to serve

Melt butter in a medium heavy-based saucepan over medium-low heat. Add flour; cook, stirring, until mixture bubbles and thickens. Gradually add milk, stirring, for 2 minutes or until mixture boils and thickens.
