DEEP-DISH MINI PIZZAS

PREP + COOK TIME 40 MINUTES MAKES 8

2 x 250g packets ready–made pizza dough
2 tablespoons pasta sauce
2 bocconcini (70g), sliced
2 tablespoons finely chopped truffle salami
2 tablespoons finely chopped drained roasted capsicum small fresh basil leaves, to serve

1 Lightly grease and preheat a 4-hole (⅓-cup/80ml) pie maker.

2 Press pizza dough portions together to form one ball. Roll dough on a lightly floured surface until 5mm thick. Using a 9cm round cutter, cut out 8 rounds from pizza dough. Cover 4 dough rounds with baking paper to prevent dough from drying out.

Lift remaining 4 dough rounds into prepared holes; press lightly up the side. Close
