Lentils and asparagus with grilled goat’s cheese

The cheese turns gooey and indulgent, and it tastes great with the asparagus, earthy lentils and sharp dressing. You’ll be in love as soon as you give it a go!
YOU WILL NEED
1 red onion, finely sliced500g asparagus spears2 × 250g pouches of ready-cooked puy lentils60g lamb’s lettuce30g mix of flat-leaf parsley and tarragon, leaves picked from stalks75g walnuts, toasted and roughly chopped2 × 125g logs of firm goat’s cheese2tbsp clear
