200g lean minced chicken
2 golden shallots, thinly sliced
450g Swiss brown mushrooms, wiped clean, sliced
1 bunch fresh coriander, leaves picked, roots roughly chopped
2 garlic cloves, crushed
½ teaspoon dried chilli flakes
2 cups store-bought cauliflower rice or finely chopped cauliflower florets
1 tablespoon reduced-salt tamari or soy sauce
Juice of 1 lime
4 eggs
2 Roma tomatoes, cut into wedges
1 Lebanese cucumber, thinly sliced
2 tablespoons unsalted roasted peanuts
4 spring onions, finely chopped
1 tablespoon chilli oil, to serve
