Indonesian fried rice

Sambal oelek is a spicy Indonesian chilli paste and perfect for giving a fiery kick to this simple rice dish.

Serves 1Ready in 25 mins

1-2tbsp olive oil
1 chicken breast fillet, chopped
1-2tsp (according to taste) sambal oelek chilli paste
½ carrot, chopped
¼ sweetheart cabbage, shredded
25g green beans, finely chopped
250g cooked basmati rice
1 egg
½ red chilli, sliced
Cucumber slices, prawn crackers and sweet chilli sauce, to serve

 Heat a little oil in a large frying pan, and cook the chicken for 5 mins until almost cooked through. Add the chilli paste, cook for 1 min
