Watercress and dill pesto with trofie pasta and pan-fried prawns
SERVES 2
• 80g watercress
• 10g dill
• 2 cloves of garlic, peeled
• 60g pine nuts, toasted
• 55g Parmesan, finely grated
• 6 tbsp extra virgin olive oil
• Pinch of fresh basil
• 1 ½ lemons, zest and juice of 1, plus ½ to serve
• 200g trofie pasta (or other short pasta)
• 1 tbsp butter
• 10 large, good-quality, large prawns, de-veined with the head removed
• Sea salt and black pepper
