SWEET AND SOUR CHICKEN WITH EASY FRIED RICE

⅓ cup plain flour
1 free-range egg, lightly beaten
¼ cup water
500g chicken thigh fillets, cut into 1.5cm strips
Vegetable oil, for shallow-frying
1 red onion, roughly chopped
1 green capsicum, cut into 2cm chunks
2 stalks celery, trimmed, cut into 2cm chunks
1 carrot, halved, thickly sliced
1 Tbsp cornflour
1 cup chicken stock
¼ cup white vinegar
1 Tbsp soy sauce
2 Tbsp honey
½ pineapple, peeled, cored, cut into 5cm chunks
EASY FRIED RICE
2 Tbsp vegetable oil
4 free-range eggs, lightly beaten
2 tsp sesame oil
3cm ginger, cut into matchsticks
2 cloves garlic, thinly sliced
¾ cup frozen peas
2 x 250g packets microwave brown rice
2 Tbsp kecap manis (sweet soy)
