12 uncooked medium king prawns
½ fresh small red Thai chilli, chopped finely
2 cloves garlic, crushed
2 tsp finely grated lime rind
1 tsp finely chopped fresh coriander root and stem mixture
1 tbsp cold-pressed extra-virgin coconut oil
1 lime, cut into wedges

QUINOA PILAF

¾ cup dried red quinoa1 tsp cold-pressed extra-virgin coconut oil1 small red onion, sliced thinly1 clove garlic, crushed1 tsp each of ground cumin, coriander½ small cauliflower, cut into small1¼ cups filtered water3 medium kale leaves, trimmed, shredded coarsely2 tbsp slivered almonds, roasted½ cup loosely packed fresh coriander leaves
