SALMON LINGUINE WITH CHILLI OIL
A simple pasta dish that’s ideal for a quick midweek meal.
SERVES 2
✣200g (7oz) linguine
✣1 shallot, finely diced
✣3 cloves of garlic, finely diced
✣1tbsp capers
✣2tbsp chilli oil, extra to serve
✣400g (14oz) MSC wild Pacific red salmon
✣Zest of 1 lemon
✣1tbsp chopped dill
✣Small handful of rocket leaves
✣2tbsp grated Parmesan
✣Pinch of sea salt and cracked black pepper
1 Bring a large pot of salted water to the boil. Cook the linguine for 10-12 mins if dried or 3 mins if fresh.
2 Meanwhile, soften the chopped shallot, garlic and capers in chilli oil. Cook for 4-5 mins and then add in the salmon, lemon zest and dill. Add a spoonful of the pasta water and cook for 3-4 mins.
