SEARED SALMON ON A FRESH SWEETCORN SALSA
A new take on salmon. Sweetcorn is the hero in this salsa – the punchy flavours work well with the richness of salmon.

✣6 tomatoes
✣1 red onion, finely chopped
✣1 avocado, finely chopped
✣2 corn on the cob (or 200g (7oz) frozen sweetcorn, thawed)
