AIR-FRY EVERYTHING!
Chipotle Chicken Sweet Potato Splits
Serves 6, Prep and Cook 40 mins
6 small sweet potatoes (about 180g each), washed
1 tblsp olive oil
1 tblsp chipotle seasoning
1½ cups (150g) shredded roast chicken meat
½ green capsicum, finely chopped
¼ cup coarsely chopped fresh coriander, plus extra to serve
½ x 300g jar tomato salsa
1 cup grated Tasty cheese
Sour cream, guacamole (see Tip) and lime wedges, to serve
1 Place potatoes in a large bowl. Drizzle with oil. Sprinkle with 1 tsp chipotle seasoning. Toss to coat.
Pull out the pan and basket from a 7-litre air fryer. Line base of basket with baking paper and arrange potatoes on top. Slide pan and basket back into air fryer. Set temperature to 200C. Set timer and cook for 20 minutes until potatoes are just tender when tested with the tip of a small sharp knife. Cool potatoes in basket for 15 minutes, then
