CHICKEN KIEV AND CHUNKY CHIPS

2 garlic cloves, crushed Finely grated zest of 1 lemon, and the juice of ½
120g plain quark
10g fresh parsley, chopped
4 large skinless and boneless chicken breasts, fat removed
800g floury potatoes , cut into chunky chips
Low-calorie cooking spray
1 medium egg , beaten
2 slices wholemeal bread (from a small 400g loaf), whizzed into breadcrumbs
300g carrots , cut into rounds
250g green beans , trimmed
200g thin-stemmed broccoli
1 Preheat your oven to 200°C/fan 180°C/gas 6. Mix the garlic, lemon zest and juice, quark and parsley.
2 Slice a pocket lengthways into the chicken breasts, making sure not to cut all the way through. Spoon ¼ of the mixture into each pocket and press together to seal.
3 Spread the chips on a large baking tray and spray with low-calorie cooking spray. Season and bake for 40 mins.
