Warm asparagus, pea & salmon rice

Serves 4

2 bunches asparagus, trimmed, sliced
1½ cups frozen baby peas
2 x 250g packages microwaveable brown rice
415g can salmon, drained (or 2 x 210g cans)
130g baby spinach
1 lemon, zest and juice
1 tablespoon olive oil
Pinch sugar

1 In a large saucepan, cook asparagus and peas in boiling water until just tender. Drain well.

2 Cook rice according to packet directions. In a large bowl, place rice, cooked vegetables, salmon and baby spinach.
