Spelt flour, made from the ancient variety of wheat, is a nutritious choice for baking as it is higher in several important nutrients (such as protein and dietary fibre) than regular wheat. You can use half regular plain flour and half spelt if you prefer a muffin with a Lighter texture. Swapping butter with extra virgin olive oil reduces the saturated fat content and boosts heart-healthy monounsaturated fatty acids.
