Chocolate & coconut slice

PREP + COOK TIME 45 MINUTES MAKES 20 PIECES

125g butter, chopped
100g dark chocolate, chopped finely
1/3 cup (75g) firmly packed brown sugar
2 eggs, beaten lightly
1 teaspoon vanilla bean paste
½ cup (75g) plain flour
¼ cup (25g) cocoa powder
½ cup (65g) dried cranberries

COCONUT TOPPING

4 egg whites
2/3 cup (150g) caster sugar
2 cups (160g) desiccated coconut

1 Preheat oven to 180°C. Grease a shallow 20cm square cake pan. Line base and two sides with baking paper, extending paper 5cm over sides of pan.

2 Combine butter and chocolate in a small saucepan. Cook, stirring, over low heat until just melted.
