Coconut almond bread with passionfruit chia jam
SERVES 8 (MAKES 1 LOAF)
PREP + COOK TIME 1 HOUR
½ cup (65g) gluten-free self-raising flour
½ cup (80g) coconut flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/3 cup ( 150g) caster sugar
¼ cup (40g) white chia seeds
¼ cup (30g) almond meal
5 eggs
½ cup ( 125ml) coconut oil, melted
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
¼ cup (60ml) water
2 tablespoons shredded coconut
150g fresh ricotta
2 tablespoons caster sugar

1 cup (250ml) passionfruit pulp
2 tablespoons white chia seeds
