1 tablespoon lime juice, plus lime wedges to serve
½ cup loosely packed fresh mint leaves, roughly torn, plus extra to garnish
½ cup loosely packed fresh coriander leaves
2 large bunches baby bok choy
2 x 250g pouches microwavable low-GI brown rice
