1 small red onion, thinly sliced
1 red capsicum, thinly sliced
1 tablespoon lime juice, plus lime wedges to serve

½ cup loosely packed fresh coriander leaves
2 large bunches baby bok choy
2 x 250g pouches microwavable low-GI brown rice
