Late-Summer Bounty

Cast Iron-Seared Okra

MAKES 6 TO 8 SERVINGS

Use up a bumper crop of okra for this simple and easy side.

⅓ cup yellow cornmeal
1 teaspoon kosher salt
¾ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon smoked paprika
¼ cup olive oil, divided
2 pounds medium fresh okra, stems trimmed and halved lengthwise
Garlic-Pepper Sauce (recipe follows)

1. In a small bowl, combine cornmeal, salt, pepper, onion powder, garlic powder, and paprika.
