Shredded beef & lobster “carnitas”

INGREDIENTS
2 tbsp vegetable oil
• 1.4kg beef chuck, cut into large cubes
1 tbsp kosher salt
2 cups minced onion
6 garlic cloves, chopped
½ tsp cumin
1 tsp coriander
1 tsp smoked paprika
1 tbsp chipotle in adobo sauce
1 (410g) can chopped tomatoes
2 lobster tails or about 350g cooked lobster meat
8 tortillas
Scallions, jalapeno pepper, onion, coriander, sour cream (for serving)
DIRECTIONS
1) Preheat oven to 180°C.
2) Heat oil in a heavybottomed, oven-safe pan over medium-high heat. Pat beef cubes dry and toss with salt. Add beef to pan and cook until browned on all sides. Remove from pan and set aside.
3) Drain oil from pan, add onions, and cook 3 minutes over medium heat. Stir in garlic, cumin, coriander, paprika, chipotle, and tomatoes
