WHAT YOU NEED
★ 1 tablespoon of canola oil★ 400g boneless, skinless chicken thigh fillets – thinly sliced★ 1 tablespoon crushed garlic★ 1 tablespoon crushed fresh ginger★ 4 cups cooked brown rice (see tips below!)★ 2 eggs – beaten★ 2 cups purple cabbage – shredded★ 2 carrots – thinly sliced★ 1 cup sliced button mushrooms★ 1 cup frozen peas★ 1 cup mung bean sprouts★ 4 shallots – chopped, plus extra to serve★ 2 tablespoons reduced-salt soy sauce★ 1 tablespoon sesame oil★ Sriracha sauce (optional) to serve
