Twice as spice

We recently visited Sri Lanka and Malaysia where I got to indulge in all those spicy dishes I love so much, and discover some new ones which I’ve been busy recreating back at home. Here are some of my recipes inspired by that trip, full of heat and flavour to keep you warm till summer.

Spicy fried noodles

Ready in 35 minutes | Serves 4-5 | DF

This dish is similar to mee goreng. Ideally, use a large wok so everything can fit in easily. Add more or less chilli sauce and fresh chilli depending on how hot you want your noodles!

1-2 Tbsp hot chilli sauce (I used sriracha), plus extra for serving 2 Tbsp oyster sauce 1 Tbsp soy sauce
1 tsp brown sugar
2 Tbsp oil
4 eggs
400g chicken breast, thinly sliced
1 large onion, sliced
2 cloves garlic, minced
¼ green cabbage, shredded
400g egg noodles
3 baby bok choy, leaves separated
4 spring onions, sliced (separate white and green part)
Juice ½ lemon
1-2 fresh red chillies, finely sliced
1-2 handfuls mung beansprouts
