Corn & kumara fritters

PREP + COOK TIME 30 MINS MAKES 8

Cook in boiling water until tender; add for the last 2 minutes. Drain. Mash ku¯mara. Cut kernels from cob and add to mash with ; season and mix. Shape 1/3-cupfuls into patties. Placein a bowl. Whisk in a bowl. Put in a third bowl. Dust patties in flour, dip in egg and coat in coconut. Refrigerate for 15 minutes. Heat in a frying pan over low-medium heat. Cook, in batches, for 3 minutes each side or until golden. Drain on a paper towel.
