2 tsp extra virgin olive oil
1 brown onion, finely chopped
500g turkey mince
50g brie, chilled, finely chopped
120g ( 1 /3 cup) apricot jam
70g (1 cup) fresh breadcrumbs
1 /3 cup finely chopped fresh thyme leaves
3 sheets frozen butter puff pastry, partially thawed, halved
1 egg, lightly beaten
2 tsp sea salt
½ tsp cracked black pepper
1 Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring, for 5 minutes or until softened. Transfer to a large bowl. Set aside to cool.
2 Add mince, brie, jam, breadcrumbs and ¼ cup thyme to the bowl. Season. Stir until well combined.
3 Preheat oven to 200°C/180°C fan forced. Line 2 large baking trays with baking paper. Place 1 piece of pastry on a flat surface. Spoon ½ cup turkey mixture along 1 long edge of pastry. Roll up to enclose filling, gently pressing to seal. Repeat with remaining pastry pieces and turkey mixture to make 6 rolls. Trim ends.
