• 500g mixed heirloom carrots (carrot tops set aside)• 1 tbsp• 2 tsp za’atar• 150ml full-fat Greek yoghurt• Handful of roughly chopped carrot tops• 1 tbsp runny local honey• 1 tsp toasted sesame oil• Handful of shelled pistachios, toasted androughly chopped• Sea salt and black pepper
