LIME-COCONUT CAKE & PINEAPPLE GLAZE

Ingredients
200 g softened butter, extra for greasing
200 g caster sugar
Fine rind and juice of 2 limes, extra to serve
2 eggs
1/2 cup milk
1 cup plain flour
80 g shredded coconut, extra to serve
3/4 tsp baking powder
For the glaze
300 gm pure icing60 ml (1/4 cup) pineapple juiceJuice of 1/2 lime
