TORTELLINI BOSCAIOLA

SERVES 4 PREP AND COOK: 20 MINS

625g packet fresh veal tortellini
2 tblsps olive oil
200g rindless, streaky bacon, thinly sliced
300g button mushrooms, thickly sliced
3 cloves garlic, crushed
3 green spring onions, finely chopped
½ cup dry white wine
300ml tub light cooking cream
2 tblsps chopped fresh chives, extra to garnish
Shaved parmesan, to serve

1 Cook tortellini in a large saucepan of boiling, salted water until tender. Drain.

2 Meanwhile, heat half the oil in a large, non-stick frying pan over a medium to high heat. Add bacon. Cook, stirring, for about 5 minutes, or until crisp. Drain on absorbent kitchen paper.
