Lamb kleftiko traybake
Kleftiko can be made with a whole joint of lamb, leg or shoulder, or pieces of meat. We’ve used lamb off the bone for ease. Feta is optional, but it adds a nice, creamy texture and tangy flavour to the dish.
SERVES 4 PREP 10 mins plus at least 2 hrs marinating COOK 1 hr 10 mins EASY
2 lemons, zested and juiced
4 garlic cloves, crushed
1 tbsp dried oregano
400g diced lamb leg, trimmed of all fat
1 bay leaf
250g waxy or salad potatoes
4 tomatoes, quartered
1 red onion, sliced
2 red peppers, seeded and chopped
60g feta (optional)
