ROASTED SWEET POTATO WEDGES WITH CORIANDER & ALMOND SMASH

PREP TIME: 10 MINS

COOK TIME: 20 MINS

SERVES 6 (AS A SNACK)

250g orange sweet potato, unpeeled, cut into 2.5cm wedges
2 Tbsp olive oil
⅓ cup chopped coriander
2 Tbsp finely chopped red capsicum
2 Tbsp toasted flaked almonds (see Cook’s Tip)
1 clove garlic, crushed
1 Tbsp fresh lime juice
Freshly ground black pepper
