BEEF FILLET WITH MASHED POTATOES AND ASPARAGUS
Serves: 2 Prep Time: 35 mins
Ingredients
2 potatoes, cubed
1/4 tsp baking powder
1 tsp truffle oil
4 T cream
2 x 150 g beef fillet
Salt and black pepper
4 T olive oil
4 T butter
1 clove garlic, crushed
3 sprigs rosemary
100 g asparagus
1/2 onion, sliced
Method
1. Bring potatoes to boil until cooked and soft. Season with salt and freshly ground black pepper. Mash until smooth. Sprinkle with baking powder, add truffle oil and pour cream, stir to combine.
2. Heat a non-stick pan until very hot. Season the beef fillet with salt and freshly ground black pepper.
