CHEESY MEATBALLS IN A SPICY TOMATO SAUCE
SERVES 6
FOR THE TOMATO SAUCE
30ml olive oil
1 onion, finely chopped
2 cloves garlic
3 short sticks celery
2 x 400g tins Italian whole, peeled tomatoes
30ml tomato paste
1 green chilli, chopped finely
2 tsp smoked paprika
handful fresh basil
FOR THE MEATBALLS
500g beef mince1 onion, finely chopped1 zucchini, grated60g of the1 tsp psyllium husks1 tsp salt100g mozzarella, cut into20 small squares3 tbsp olive oil
