SMOKED TROUT, POTATO, CELERIAC AND LEEK GRATIN

100g butter
50ml water
4 leeks, white parts only, washed and sliced into 3cm rounds
Sea-salt flakes and freshly ground black pepper, to season
5 medium Dutch cream potatoes, peeled and sliced 4mm thick
½ small celeriac, trimmed and sliced 4mm thick
300ml thickened cream
200ml fish stock
5 sprigs thyme, leaves
