Preface
Eugene Woldemar Hilgard came from the University of Michigan to the University of California in 1875 as professor of agriculture. A soil scientist by training and experience, he had long been interested in viticulture and enology, and his interest in California viticulture and enology was stimulated by an outbreak of phylloxera in Sonoma County. In 1876 his lecture The Phylloxera or Grapevine Louse
was published as Bulletin 23 of the University; it was reprinted in a slightly modified form in 1880. Hilgard also discussed California viticultural problems in his reports to the President of the University of California in 1877 and 1879. His interest seems to have been stimulated by the wines and brandies he had tasted as a member of a committee at the thirteenth exhibition of the Mechanics’ Institute in San Francisco in 1878.
On February 14, 1879, Hilgard wrote to his sister Rosa that he had been to Sacramento at the invitation of the Wine Committee of the Assembly, and that he hoped to obtain $4,000 for viticultural work at the University. On April 3, 1880, in a letter to S. G. Nye, a state senator at Sacramento, he supported the proposed viticulture bill then before the Legislature …
¹ That law, which was passed on April 15, 1880, consisted of two parts. One created a board of state viticultural commissioners, and the other delegated certain duties to the University of California:
… it shall be the duty of the Board of Regents of The University of California to provide for special instruction to be given by the Agricultural Department of the University in the arts and sciences pertaining to viticulture, the theory and practice of fermentation, distillation, and rectification, and the management of cellars, to be illustrated by practical experiments with appropriate apparatus; also, to direct the Professor of Agriculture, or his assistant, to make personal examination and reports upon the different sections of the State adapted to viticulture; to examine and report upon the woods of the State procurable for cooperage, and the best methods of treating the same; and to make analysis of soils, wines, brandies, and grapes, at the proper request of citizens of the State; also to prepare a comprehensive analysis of the various wines and spirits produced from grapes, showing their alcoholic strength and other properties, and especially any deleterious adulterations that may be discovered. The Regents shall also cause to be prepared, printed, and distributed to the public, quarterly reports of the Professor in charge of this work relating to experiments undertaken, scientific discoveries, the progress and treatment of the phylloxera and other diseases of the vine, and such other useful information as may be given for the better instruction of viticulturists.2
The law also made an annual appropriation of $3,500 for this work. By October 10, 1880, Hilgard had a 20 x 46 foot cellar constructed on the Berkeley campus, near the spot where South Hall now stands. Fourteen experimental fermentations were completed that season.
Systematic research work on viticulture and enology at the University of California thus dates from 1880, and continues to the present. This work was conducted on several campuses. The viticultural work was continued during Prohibition. It is therefore appropriate that the publications on viticulture and enology of the faculty, staff, and students of the University of California during the last one hundred years should be noted and that is the purpose of this checklist.
Publications have been issued on several campuses of the University and by many departments. Although we have searched printed bibliographies and University archives on various campuses, checked with many departments and contacted living persons, we have no doubt missed a few individuals altogether and were unable to locate some publications of listed individuals. The journal abbreviations used are mainly those of Chemical Abstracts (American Chemical Society).
We wish to thank Cary D. O’Keeffe of the Department of Special Collections in the UC Davis library for her careful attention to entering and editing the manuscript on the computer, and Dr. Kevin P. Roddy of the Department of Rhetoric for his technical assistance. We also appreciate the final editing by Gladys C. Castor.
The checklist, which lists more than 3,200 publications, reveals that the University has been a major world center for research in viticulture and enology. Probably no other agricultural industry in any country has been as well served in research and extension by a public institution as the grape and wine industry of California has been served by the University of California.
